Sheet Tray Salmon with Broccolini and Lemon

This one pan dinner comes together quickly and feels fancy enough for a dinner party.

Ingredients

4 filets of salmon
2 bunches broccolini, trimmed
2 lemons, sliced thinly and seeds removed
4 cloves garlic, minced
1 red onion, sliced into wide petals
2 cups drained cooked chickpeas
2 bags salad greens

Method

  1. Heat oven to 425 F
  2. Line a sheet tray with foil and lightly grease with olive oil
  3. Season the salmon liberally with salt and place skin side down
  4. Toss the broccoli, lemon wheels, garlic, onion, and chickpeas in a hefty glug of olive oil and several pinches of salt and black pepper
  5. Scatter the broccoli mixture all around the salmon
  6. Bake until the fish is just cooked through, about 20 minutes
  7. Dress the greens with a glug of olive oil and splash of vinegar or lemon juice
  8. Remove from the oven and serve NOTE by design, the skin from the salmon will stick to the foil making for easy serving
  9. Serve with a green salad on the side
