Shaved Summer Squash Salad

This salad is dead simple but the volume and diversity of herbs makes it interesting and summer-salad fresh.

Ingredients

4 medium summer squash or zucchini
1/2 cup olive oil
1/2 tsp salt
2 cups picked herbs (parsley, mint, tarragon, chives, basil)
4 oz ricotta
1 lemon, zest and juice

Method

  1. Shave the summer squash into ribbons using a mandolin or sharp knife.
  2. Combine the ricotta with the lemon zest and juice and a big pinch of salt.
  3. Toss the shaved squash and herbs together with the olive oil and salt.
  4. Transfer to a serving dish and dot all over with the lemon ricotta and several grinds of black pepper.
