Sernik: Polish Cheese Cake

This Polish style cheese cake is stable and cooks up like a dream to pair with any seasonal fruit you want to show off.

Ingredients

1020 g | 4 1/2 cups cream cheese, softened
392 g | 2 cups sugar
390 g | 3 1/4 cups heavy cream
25 g | 1/4 cup all purpose flour
pinch of salt
6 eggs
1 yolk
1 tsp vanilla

Method

  1. Heat oven to 425 F
  2. Paddle cream cheese in mixer until smooth
  3. Add the sugar and mix until combined and then scrape down the sides to be sure it is evenly mixed
  4. With the mixer on low, stream in the heavy cream
  5. Sift the flour and salt over the mixture
  6. Add the eggs one by one allowing each one to blend in completely before adding the next
  7. Finish with the yolk
  8. Add the vanilla then pour into a greased springform pan or baking dish
  9. Bake until the center barely jiggles and the top is deeply browned, about 45 minutes
  10. Allow to cool completely before slicing
