Radish Black Bean Tostadas

We always forget about tostadas but then remember just how stinking good they are!

Ingredients

1/4 cup olive oil
1/2 tsp smoked paprika
1/2 tsp cumin seed
1/4 tsp ground cayenne
1/2 cup sour cream
1 bunch kale, cut into ribbons
12 tortillas
1 1/2 cup cooked black beans
1 bunch radish, sliced thinly
2 scallions, sliced thinly
1 clam shell micro cilantro
2 limes cut into quarters

Method

  1. Heat the olive oil in a small frying or saute pan until shimmering
  2. Add the spices and fry until fragrant
  3. Pour the spiced oil into the sour cream and mix thoroughly
  4. Sprinkle the kale with salt and massage until tender and dark green
  5. Toast the tortillas in a hot frying pan or under the broiler until crispy
  6. Top each tortilla with a spread of the spiced sour cream
  7. Top with a handful of kale, a spoonful of black beans, sliced radishes and cilantro
  8. Serve with lime wedges
