Melon with Crispy Oats and Yogurt

This can be breakfast or dessert. Look for melons that are super fragrant and at absolute peak ripeness.

1 melon, any variety
1 C rolled oats
1/4 C olive oil
1/4 C honey or maple syrup
1 C pecans
1 C yogurt


  1. Heat oven to 350F
  2. Combine the oats, oil, syrup, and pinch of salt
  3. Bake until the oats are golden brown and crispy
  4. Toast the pecans until fragrant
  5. Cut the melon into wedges or large chunks
  6. Lay the melon on a serving plater or in a bowl
  7. Sprinkle the oats and pecans over the melon
  8. Serve with the yogurt on the side or spooned over the top
