Lunchbox Peppers Stuffed with Cheese Curds

This is simple but extremely decadent food at its best!

1 quart Lunchbox Peppers
4 oz cheese curds
olive oil


  1. Slice the tops off the peppers and remove the seeds inside
  2. Fill the peppers with cheese curds
  3. Place the peppers on a baking sheet lined with tinfoil or parchment
  4. Drizzle with olive oil 
  5. Broil until the skin is blistered and blackened and the cheese is melted
  6. Remove and let cook 2-5 mintues
  7. Serve as an appetizer or a snack
