Grilled Chicken Nachos

From start to finish, this entire dinner can be made on the grill.

Ingredients

2 chicken breasts
1 tsp cumin seed
1 tsp smoked paprika
1/4 cup yogurt or buttermilk
1 bag tortilla chips
2 cups cooked black beans
2 cups shredded melty cheese, like pepperjack, cheddar, or mozzarella
1/4 cup hot sauce
1/2 cup tomato salsa fresh or canned
1/2 cup sour cream
1 bunch cilantro, roughly chopped
3 scallions, sliced thinly
2 limes, cut into quarters

Method

  1. Marinate the chicken breasts with the spices, a hefty pinch of salt, and the yogurt and let rest for 30 min
  2. Heat the grill to medium high
  3. Remove the chicken from the marinade and grill until cooked through, about 6 mintues per side
  4. Let the chicken rest for 10 minutes before slicing into thin strips
  5. On a large baking sheet build the nachos by layering the all ingredients except the sour cream, cilantro, and limes
  6. Reduce the grill heat to low
  7. Place the baking sheet on the grill and cover until the cheese melts, about 6 minutes
  8. Garnish with the sour cream, cilantro, scallions, and limes then serve
