Chicken Schnitzel with Broccoli Raab

Schnitzel is one of our favorite meals especially paired with slightly bitter broccoli raab and zingy lemon.

Ingredients

4 boneless, skinless chicken breasts
1 cup flour
2 eggs, whisked
2 cups breadcrumbs
2 cloves garlic, sliced thinly or minced
1 lemon, cut into thin circles and seeds removed
2 bunches broccoli raab, roughly chopped

Method

  1. Pound the chicken breasts thinly
  2. Add a hefty pinch of salt to the flour and then dredge the pounded breasts in the flour
  3. Then transfer to the whisked eggs to coat
  4. Then dredge in the breadcrumbs
  5. Heat 3/4 cup of olive oil in a large frying pan until it shimmers and then pan fry the chicken breasts until golden brown then flip and pan fry the other side then remove from the pan and let rest on a tray with a rack or paper towel-lined tray
  6. Add the lemon and garlic to the oil and fry until just starting to brown
  7. Add the broccoli raab with a hefty pinch of salt and sautee until soft
  8. Serve the schnitzel with a big pile of the broccoli raab on top
