Charred Shishito Peppers

This recipe is dead simple and and so much more than the sum of its parts. Hold your nerve and really blacken the peppers.

1 qt shishito or padron peppers
1/2 tsp chili flakes
1/4 C neutral oil
2 T sunflower seeds


  1. Heat a frying pan and toast the chili flakes
  2. Remove from heat and add the oil, set aside and allow to steep for min 10 minutes
  3. Roughly chop the sunflower seeds and season with a pinch of salt
  4. Heat a large frying pan until smoking hot, add a glug of neutral oil and blister peppers until well charred (be careful they spit!)
  5. Flip and char the other side and season with salt
  6. To serve, drizzle with the chili oil and sunflower seeds
