Brutti Ma Buoni

These classic Italian almond cookies are one of our favorite pairings with any summer fruit.

3 egg whites
2 cups almond flour
1 1/2 cup powdered sugar
1 tsp vanilla
pinch of salt


  1. Heat the oven to 400F
  2. Whisk the egg whites until they are foamy but not yet holding peaks
  3. Add the almond flour, powdered sugar, vanilla, and salt and stir to combine
  4. Scoop onto a parchment or silicone mat lined tray leaving at least 1 inch between each cookie
  5. Bake until golden brown and set, about 14 minutes
  6. Remove and allow to cool
