Blackberry Muffins

These muffins are light and fluffy and made perfectly well with any berry-- even frozen.

2 C all purpose flour
2 1/2 tsp baking powder
1/3 C sugar
1 tsp salt
2 eggs
3 T melted butter
1 C milk
1 1/2 C blackberries


  1. Heat oven to 375F
  2. Whisk together flour, baking powder, sugar, and salt
  3. Whisk together eggs, milk and melted butter
  4. Combine the wet ingredients and the dry ingredients
  5. Scoop into muffin tins
  6. Add blueberries to the muffins in the cups (this helps keep the blueberries from staining the batter)
  7. Top with a sprinkle of sugar
  8. Bake until a knife inserted in the center of the muffin comes out clean (about 12-15 minutes)
