Arugula and Strawberry Salad

Broiling the strawberries is a nice way to change the texture and concentrate the flavor. If you can't be bothered, feel free to use them fresh as is.

1 bag arugula
1 qt strawberries
2 oz parmesan
2 T sherry vinegar
1/4 cup olive oil
1/4 cup pistachios


  1. Wash and dry the arugula
  2. Wash and hull the strawberries
  3. Heat the oven to broil
  4. Toss the strawberries with a glug of neutral oil and a pinch of salt
  5. Spread the berries out on a tin-foil lined baking sheet allowing plenty of space between the berries.
  6. Broil the berries until they char and their liquid is released and then reduced to a thick syrup (about 7 minutes). 
  7. Dress the arugula with the vinegar, oil, and a big pinch of salt and pepper. 
  8. Transfer the arugula to a serving platter.
  9. Scatter the pistachios and roasted strawberries over the greens.
  10. Grate the cheese over the top of the salad and serve.
