Arugula and Feta Frittata

Frittatas make for a filling breakfast that comes together in a flash and can be kept in the fridge all week long for weeks when you don't have time to make something from scratch.

Ingredients

1 dozen eggs
1 cup heavy cream
1 tsp salt
1 onion, thinly sliced
1 bag arugula or spinach
4 oz feta, crumbled

Method

  1. Heat oven to 325F
  2. Whisk the eggs, cream, and salt together until smooth
  3. Heat a large frying pan over medium heat
  4. Add a glug of olive oil, add the onions with a sprinkle of salt and sweat until soft
  5. Add the whisked eggs and then the arugula
  6. Push the arugula under the egg and then scatter the feta all over
  7. Place the frying pan into the oven and bake until the egg is set, about 15 minutes
  8. Remove from the oven, let cool 5-10 minutes, slice and serve
