Goat's milk cheese has been a staple in households around the world for centuries. Every region has its own style of making goat cheese that highlights the distinctive features of where the cheese is produced — from the bloomy rinds of the Loire Valley to the experimental and inventive wheels of new American artisan cheesemakers.
In this class, Taylor Hartson, a farmstead cheesemaker at Verdant Hollow Farms, will teach us how to make four kinds of cheese from a simple lactic goat's milk curd, just by tweaking the cultures, the shape, and the aging style. We'll talk about how to select and source ingredients for cheesemaking, demonstrate the key steps of the process, and, of course, taste a variety of goat's milk cheese produced right here in southwest Michigan.
We are thrilled to have Taylor Hartson as our guest instructor for this cheesemaking workshop! Taylor is the Dairy Operations Manager at Verdant Hollow Farm in Buchanan, MI and helped open their farmstead goat creamery in 2024. Join us to delve into the world of cheesemaking right here in Southwest Michigan.
Students will arrive to a glass of sparkling wine and snacks then partner up with their fellow classmates to prepare several goats milk cheeses with demonstration and support from Taylor Hartson.
After creating their cheeses, students sit together for a meal from the Granor Kitchen and have the opportunity to ask any remaining cheesemaking questions. Dinner will feature Granor Table Wine.
Students leave with full bellies, cheese to take home, complete digital and printed recipes, and a hands on knowledge of each dish as well as a slew of kitchen tips and techniques to take to their own kitchen.
