Oat and Honey Bars

Recipe from: Taste Of Granor

This recipe comes straight from the halls of Ballymaloe Cookery School in Cork, Ireland, where Abra trained. It is delicious on its own right or alongside stewed fruit and custard or yogurt.

Please note that all of the ingredients with an oz measurement need to be weighed. A volume measure will change the texture of the bars. They are also very buttery, so be prepared!

Ingredients

12 oz butter
8 oz sugar
1 T honey
16 oz rolled oats (not instant)
1/4 tsp salt

Method

  1. Heat oven to 350F
  2. Melt the butter, add the sugar and honey and stir to combine.
  3. Place the oats and salt in a medium mixing bowl.
  4. Pour the butter mixture over the oats and salt and stir to coat evenly.
  5. Pour the oat mixture on a parchment lined baking sheet and bake until golden brown and caramelized (about 20 minutes).
  6. Remove from the oven and let cool 10 minutes then slice into bars.
  7. Serve fully cooled but not chilled.
