Vinegar Roasted Onions

These tangy onions go well with everything from cheese and charcuterie to roasted fish to mushrooms and pasta.

1 bunch cippolini
1/4 C neutral oil
1/2 C apple cider vinegar
1/2 tsp salt


  1. Heat oven to 325F
  2. Clean and dry the onions. 
  3. In a heavy bottomed frying pan, heat the neutral oil
  4. Sear the onions either on the flat side 
  5. Allow the onions to get really, really dark
  6. Flip and brown the other side
  7. Remove from the heat, sprinkle with salt and pour the vinegar over the onions
  8. Cover loosely with tinfoil and transfer to the oven
  9. Bake until the onions are tender
  10. Cool and store with any liquid left in the frying pan
