Toum

This recipe, adapted from Sohla El-Waylly is a great way to use up a bunch of garlic and have a delicious condiment waiting for you in the fridge. It is perfect alongside grilled meats, roasted root vegetables, or tucked into a pita loaded up with tomatoes and cucumbers.


Ingredients

1/3 cup garlic cloves, peeled
1/2 tsp kosher salt
1 Tbsp lemon juice
1 Tbsp water
1 cup neutral oil, grapeseed, canola etc

Method

  1. In a food processor, blend the garlic and salt into a fine paste
  2. Add the lemon juice and water and blend again
  3. With the food processor on, slowly drizzle in the oil to make a mayonnaise like consistency
  4. Taste and adjust the seasoning
  5. To store, keep covered in the fridge. It will last indefinitely and mellows with time.
