Sheet Pan Sausages with Sweet Onions and Crispy Kale

One pan summer dinner featuring the first of the sweet onions! 


Ingredients

4-6 Italian Sausages or 2 kielbasa style sausages, cut into 6 inch lengths
2 sweet onions, cut into wide petals
1 bunch kale, ribs removed and cut into 1 inch wide ribbons
1 tbsp fennel seed
1/2 tsp chili flakes (optional)
1/4 cup whole grain mustard
1/4 cup olive oil

Method

  1. Heat oven to 400F
  2. Toss the sausages and onions with a glug of olive oil and pinch of salt then lay out on a baking sheet and roast for 20 minutes
  3. Toss the kale with another glug of olive oil and the fennel seed and chili flakes with a pinch of salt
  4. Remove the sheet tray and top with the kale and return to the oven for an additional 10 minutes or until crispy
  5. Mix the mustard and olive oil adding a couple of tablespoons of water to make saucy
  6. Remove from the oven and drizzle with the mustard sauce and serve
  7. Note: You could also add potatoes or gnocchi to the pan with the sausages if you want a starch on the same pan
