Seedy Cucumber Toasts

This isn't much of a recipe so much as it is a combo-- the super textured seeded spelt bread against the creamy, creamy ricotta topped with crunchy cucumbers and bright green pea shoots.


2-4 cucumbers, sliced into rounds or half moons
4 slices seeded spelt bread
1/2 cup liuzzi ricotta
everything spice mixture


  1. Dress the cucumbers with a big glug of olive oil, pinch of salt, and grind of black pepper and let rest 5 min
  2. Toast the seeded spelt and allow to cool
  3. Spread the ricotta all over
  4. Top with the cucumbers and then the greens and serve with an extra drizzle of olive oil and a sprinkle of everything spice
