Scallions with Paprika Mayo and Almonds

Slightly smokey and rich, this is a nice option for a bbq appetizer.


1 bunch scallion
1/2 cup mayo
1 1/2 tsp smoked paprika
1/4 cup olive oil
1/2 cup almonds


  1. Heat the olive oil in a small frying pan and when shimmery add the paprika to toast
  2. Remove from the heat and let steep 2 minutes
  3. Combine with the mayo until evenly distributed
  4. Roughly chop the almonds
  5. Grill the scallions until well-charred on the tops
  6. Remove from the heat, drizzle with the mayo, and top with a sprinkle of almonds
  7. Serve warm or room temperature
