Scallion Cheddar Biscuits


Ingredients

2 cups all purpose flour (preferably from Janie's Mill)
2 tsp baking powder
1/2 tsp baking soda
1/2 tsp salt
4oz unsalted butter, frozen
1 cup sharp cheddar, shredded
4 scallions or 2 ramps, white and green parts sliced thinly;
1 cup buttermilk

Method

  1. Heat oven to 450F
  2. Combine dry ingredients
  3. Grate butter on largest hole of a box grater
  4. Add grated butter, cheese, and scallion to the flour mixture and stir to combine
  5. Add the buttermilk and quickly stir until it forms a dough that pulls away from the side
  6. Transfer to a floured work table and pat into a rough rectangle
  7. The rectangle into thirds and roll into a rectangle the same size as you started (creating layers of butter as you fold). Repeat three times
  8. Roll dough into a 1 inch thick slab. Cut into 3"x3" squares and transfer to a baking sheet
  9. Bake until golden brown (about 16 minutes)
