We love marinating cheeses to add flavors and submerging the cheese in olive oil helps it last another couple of weeks getting more flavorful by the day.
Ingredients
2 stalks green garlic, substitute a bunch ramps, scallions, or leeks
1 lemon, zest and juice
1/2 tsp chili flakes
1/2-3/4 cup olive oil
6 oz fresh chevre or ricotta
1 loaf seeded spelt
Method
Thinly slice the green garlic (or other alliums) and then combine with the lemon zest, juice, chili flakes, and olive oil
Place the cheese in a container and then cover with the green garlic olive oil mixture
Slice the bread and toast and serve the marinated cheese with the bread
Be sure to sop up every last drop of that flavorful olive oil or use to dress pasta or roasted asparagus after the fact
