Potato Caviar

This is one of our favorite appetizers especially when using the Blis smoked caviar. Serve the potatoes warm or room temperature.


2 lbs potatoes, any variety
1 cup sour cream
1 tin caviar
dill or chives, chopped (optional)


  1. Boil the potatoes in salted water
  2. Drain and gently press each potato to make it flat
  3. Before serving heat a glug of neutral oil in a frying pan
  4. In batches, pan fry each individual potato until golden brown then flip and fry the other side
  5. Season the potatoes with salt, top with a dollop of sour cream, finish with a spoonful of caviar, and chopped herbs if using
