Pea Shoot and Ricotta Toasts

Sometimes the best treats are the most simple. This comes together quickly and can be made with just about any herb if you don't have pea shoots on hand.


1 clam shell pea shoots, roughly chopped
1 orange, zest only
1/4 cup olive oil
1/2 loaf sourdough bread, sliced thickly
6 oz ricotta, preferably Liuzzi
1 tsp paprika or piment de'ville


  1. In a small bowl combine the olive oil, orange zest, and spices
  2. Toast or grill the bread
  3. Drizzle the bread with the flavored olive oil
  4. Spread the ricotta evenly across the slice of toast
  5. Top with the pea shoots and then drizzle more of the flavored oil over the top
  6. Finish with a pinch of salt and a grind of black pepper
