Irish Soda Bread

The Granor flour is perfect for this St. Paddy's Day classic. Though, truth be told, we now make it anytime we need a quick bread. 


Ingredients

1 lb or 3 1/2 cups all purpose flour
1 tsp salt
1/2 tsp baking soda
13 to 16 oz buttermilk

Method

  1. Heat oven to 450 F
  2. Mix the flour, baking soda, and salt in a large bowl
  3. Make a well in the center and add 80% of the buttermilk
  4. With your hand like a claw bring the dough together adding a splash more buttermilk as needed to make a shaggy, slightly tacky dough
  5. Flour a work surface and flip the dough onto it
  6. Shape the dough into a disc 2 inches thick
  7. Transfer to a floured baking sheet
  8. With a kitchen knife, cut a cross through the center of the disc and prick a hole in each quadrant
  9. Bake for 15 minutes then turn the oven down to 400F
  10. Continue baking for 15-20 minutes or until the bread reads 200F internally and sounds hollow when thumped
  11. Remove from the oven and allow to cool 10 minutes before slicing
