This tangy sauce uses up the end of the season's tomatoes and perfect to spoon over cheeses, grilled meats, or a big bowl of beans. It can also be made with tomatillos to good results.
Ingredients
2 lbs green tomatoes
1 onion
4 cloves garlic
1 tsp salt
1/4 cup apple cider vinegar
1/4 cup brown sugar
Method
Wash and dice the tomatoes
Slice the onion and garlic thinly
Heat a glug of oil in a large frying pan until smoking hot
Add the tomatoes allowing them to blister on the sides
When the tomatoes are well browned and the juices have started to run
Add the onion, garlic and salt and stew until the onion is soft
Add the vinegar and sugar and cook until slightly thickened
