Goat Cheese Vinaigrette

This "vinaigrette" always looks like it is broken after it is mixed together, but it spoons over a pile of greens or roasted vegetables just beautifully. It is a great way to distribute the goat cheese more evenly than if it was dotted over the salad.


Ingredients

1 small shallot, minced
1/4 cup red wine or sherry vinegar
1/4 cup olive oil
4oz fresh goat cheese

Method

  1. In a large bowl combine everything except the goat chesse
  2. Whisk in the goat cheese, taste and add more salt and black pepper as desired
