Delicata Squash, Cabbage, with Stewed Tomato

This stewy veggie dish is perfect with a big slice of toast to soak up all the goodness.


4 strips bacon, cut into small pieces
1 onion, sliced thinly
4 cloves garlic, minced
1 delicata squash, cut into half moons and seeds removed
1 head napa cabbage, sliced thinly
4 large red tomatoes, cored and cut into large dices


  1. In a large sauteé pan, heat a glug of oil over medium low heat and fry the bacon until crisp
  2. Add the onion and garlic and sweat until soft
  3. Add the squash half moons, the cabbage, and diced tomato with a big pinch of salt and black pepper
  4. Allow to soften and cook all together until the squash is tender and the cabbage soft
  5. Taste and adjust the seasoning as desired
  6. Serve with a big slice of toast for dunking
