Cucumbers with Whipped Tahini

Tahini smooths into a light creamy dip when whipped with a bit of water. Use it to dip vegetables or schmear on toast or in a pita sandwich.


4-6 cucumbers, cut into large wedges
3/4 cup tahini
1/4 cup water
1/2 tsp salt
1 tbsp red wine vinegar


  1. In a medium bowl whisk all ingredients except the cucumber until thick and creamy
  2. Taste and adjust seasoning
  3. Transfer to a small bowl or platter and serve with the cucumber wedges
