1 bag spinach
1 onion
1/2 C white wine
1 C cream
1/4 tsp salt


  1. Wash and dry the spinach
  2. Slice the onion thinly
  3. In a frying pan heat a knob of butter (about 1 T)
  4. Gently cook the onion with the salt until soft
  5. Add the white wine and allow to evaporate until almost dry
  6. Add the cream and bring to a boil and reduce by half
  7. Pour the cream mixture over the spinach and let it wilt gently
  8. Season with black pepper and serve
