Creamed Spinach
This spinach is lighter than the standard steak house fare.
Ingredients
1 bag spinach
1 onion
1/2 C white wine
1 C cream
1/4 tsp salt
Method
Wash and dry the spinach
Slice the onion thinly
In a frying pan heat a knob of butter (about 1 T)
Gently cook the onion with the salt until soft
Add the white wine and allow to evaporate until almost dry
Add the cream and bring to a boil and reduce by half
Pour the cream mixture over the spinach and let it wilt gently
Season with black pepper and serve
