Chermoula

This North African sauce is the perfect accompaniment to any meal where you want a bright zip of herbs and earthy spices.


Ingredients

1/2 tsp cumin seed
1/2 tsp coriander seed
1/2 tsp chili flakes
1 tsp smoked paprika
3 garlic cloves, minced
1 lemon zest and juice
1 bunch cilantro, roughly chopped
1/4 cup sherry vinegar
1/4 cup water
1/2 tsp salt

Method

  1. In a frying pan combine all spices and toast over medium heat until fragrant
  2. Add the spices with all the other ingredients in a blender and blend into a chunky paste
  3. Taste and adjust seasoning and acidity
  4. Store in the fridge for up to 7 days or freeze
