Blackberry Melon Feta Salad

Nothing beets a cool, crunchy salad on a hot day. This salad can be prepped well in advance and tossed together at the last minute.


1 pint blackberries
1/2 cup balsamic vinegar
1/2 cup olive oil
4 sprigs thyme, leaves picked and chopped
4 cups cubed melon
2 medium cucumbers, cut into half moons
4 oz feta, crumbled or cut into small cubes


  1. In a medium bowl, combine the berries, vinegar, oil, and thyme with a big pinch of salt and a couple grinds of black pepper
  2. Toss the melon and cucumber together with some olive oil and a pinch of salt then transfer to a serving platter
  3. Scatter the feta all over and then spoon the blackberry mixture and serve immediately
