Zucchini Noodles with Basil Oil, Feta, and Chili Oil

Spiralized summer squash are a nice change of pace from the traditional summer pasta salad. If you don't have a spiralizer, simply shave the zucchini thinly with a sharp knife or mandoline.


5 sprigs basil
1/2 cup olive oil
1/4 tsp salt
1/2 tsp chili flakes
1/4 cup neutral oil
2 medium zucchini or summer squash
4 oz feta, crumbled


  1. In a high powered blender, blend the basil, olive oil, and salt to make a quick sauce the thickness of pesto
  2. In a small sauce pan heat the neutral oil until starting to shimmer. Remove from the heat and add the chili flakes and let steep at least 10 minutes
  3. Dress the zucchini noodles with the basil and chili oil adding salt as desired
  4. To serve, top the zucchini noodle salad with the crumbled feta
  5. Note: salt pulls moisture from the zucchini so dress this salad just before serving
