Whipped Chevre Butter

Fresh chevre and butter are whipped until light and airy, then folded with rosemary, thyme, pink peppercorn, and smoked salt. This recipe comes from Siam, the newest member of our kitchen team, and was featured during a recent dinner collaboration showcasing Verdant Hollow Farm. The fluffy, savory spread is delicious served with warm bread, crackers, or crisp vegetables.


Ingredients

4 oz fresh chevre, softened
4 oz unsalted butter, softened
1 tsp fresh rosemary, finely chopped
1 tsp fresh thyme, finely chopped
1 tsp pink peppercorns, finely ground
1/2 tsp smoked salt

Method

1. In a mixing bowl, combine chevre and softened butter.  Using a stand mixer, hand mixer, or whisk, whip vigorously until the mixture becomes airy and fluffy.

2. Add rosemary, thyme, pink peppercorns, and smoked salt.  Mix just until evenly incorporated.

3. Taste and adjust seasoning as needed.  Serve immediately or refrigerate until ready to use.  Allow to soften slightly before serving.

4.Spoon into a serving bowl, creating soft swoops and peaks, and finish with a sprinkle of pink peppercorns, thyme leaves, and smoked salt.
