Vegan Apple Cake

You won't miss the dairy or eggs with this tender and moist vegan apple cake! 


Ingredients

313g (2 1/2C) AP Flour
200g (1C) white sugar
200g (1C) brown sugar
2 tsp baking powder
1 tsp baking soda
2 tsp cinnamon
1/2 tsp ginger
1/4 tsp nutmeg
1 tsp salt
100g (1/2 C) neutral oil
250g (1C) apple sauce
155g (3/4C) non-dairy milk
1 tbsp vanilla
384g (3C) grated apple

Method

1. Preheat oven to 350F and prepare two 9" pans with parchment and pan spray. 

2. In a large bowl combine dry ingredients, AP flour, white sugar, brown sugar, baking powder, baking soda, cinnamon, ginger, nutmeg, and salt. 

3. In a seperate bowl whisk together wet ingredients; neutral oil, apple sauce, non- dairy milk and vanilla. 

4. Combine wet into dries and stir to combine. Gently fold in grated apples. 

5. Divide batter into both pans and bake for 30-40 minutes or until a toothpick comes out clean. 

6. Let cool completely before inverting cake onto cutting board to slice and enjoy!
