Ingredients
3 lbs sweet potatoes
2 oz butter
1/4 cup maple syrup
1/4 cup soy sauce
Method
Heat oven to 350F
Prick the washed sweet potatoes all over with a pairing knife or fork
Roast the sweet potatoes directly on the oven rack or on a baking tray until they are tender when pressed with a finger (about 40 minutes)
Remove from the oven and let cool until cool enough to handle
Peel back the skins and discard
Transfer the flesh of the sweet potatoes to a bowl
Add the butter, maple syrup, and soy sauce and mash until well combined
