When we make this salad, we often use our house made cherry mustard but soaking dried cherries in the vinegar before making the vinaigrette, works just as well. The dressing is strong, so feel free to add more olive oil to your liking.
Ingredients
1/4 cup dried cherries, roughly chopped
1/4 cup apple cider vinegar
1 tbsp dijon mustard
1/4 cup olive oil
2 bags spinach
2 oz dry salami, diced into cubes (optional)
4 oz blue cheese, crumbled
2 tbsp sunflower seeds or nuts (optional)
Method
Heat the apple cider vinegar until just warm
Pour over the chopped cherries and let soak for 10 minutes
Whisk together the cherry mixture, mustard, and olive oil with a big pinch of salt and couple of grinds of black pepper
Dress the spinach with the cherry dressing and transfer to a serving platter
Scatter the salami, blue cheese crumbles, and nuts all over and serve
