We love the creaminess of tahini dressing against the crisp, tangy apples, chewy lentils, and tender spinach. If you don't feel like making it yourself, we always have it stocked in the farm store.
Ingredients
1/4 cup tahini
1/4 cup water
1 tbsp honey
1 tbsp red wine or sherry vinegar
2 apples
1 bag spinach
2 cups cooked black or French lentils
Method
Whisk together the tahini, water, honey, and vinegar until smooth adding more water as needed to thin into a dressing
Cut the apples into match sticks or medium dice
Dress the spinach and apples with the tahini dressing and then toss wit the lentils and serve
