Simple Tomato Sauce

Made with ripe tomatoes, onion, garlic, and olive oil, this simple tomato sauce is a versatile kitchen staple that celebrates the flavor of peak season tomatoes. Simmered until rich and balanced, it's equally at home with pasta, pizza, or your favorite family recipes.


Ingredients

2 tbsp olive oil
1 onion, finely diced
4 cloves garlic, minced
3 lbs ripe tomatoes, cored and roughly chopped
2 tbsp tomato paste (optional, for a richer sauce)
salt and pepper
1/4 cup parsley or basil

Method

1.  Cook the aromatics. Heat olive oil in a large saucepan over medium heat.  Add the onion with a pinch of salt and cook until softened and translucent.  Stir in the garlic and cook for 30 seconds.

2. Stir in tomato paste, if using, and cook for 1 minute.  Add the chopped tomatoes, salt and black pepper.

3. Bring the sauce to a gentle simmer and cook, stirring occasionally, until the tomatoes have broken down and the sauce has thickened to your liking. If you prefer a smoother sauce, blend it at this point using an immersion blender or blender.

4. Stir in parsley or basil if using.

5. Serve with pasta, spoon over grilled vegetables or meatballs, or freeze for later use.
