Shishito Yogurt

This slightly spicy, very fragrant yogurt goes well with so many things including any platter of roasted roots you can imagine.


Ingredients

1 lb shishito peppers
1 tbsp yogurt
1 tsp salt
1 cup plain yogurt

Method

  1. Heat oven to 400F
  2. Toss the shishitos in the oil and salt and roast until soft and starting to brown
  3. Remove the stems and then blend in a food processor until smooth
  4. Fold in the yogurt, taste and serve
  5. The yogurt will keep in the fridge for up to a week or so
