This is such a great way to prepare kohlrabi-- it is a stunner and super simple. Pair with anything you would normally want with scallops, like vegetable purees, butter sauces, etc.
Ingredients
kohlrabi
sugar
salt
Method
Peel the kohlrabi and slice into 1" thick slabs
Using a biscuit cutter, punch the kohlrabi into rounds
Heat a frying pan over high heat until just about smoking
Add enough neutral oil to the pan to get to 1/4" deep oil
Press the kohlrabi rounds into the sugar and then sprinkle with salt
Place the sugared side of the kohlrabi into the hot oil and pan fry until golden brown
