Rutabaga Mash
This warming winter mash can be made with just rutabaga, just potato, or half and half.
Ingredients
3 rutabaga
1 onion
salt
1/2 cup white wine or hard cider
1 cup cream
Method
Peel the rutabaga and cut up into chunks
Slice the onion thinly
In a medium sized pot, sweat the onion and salt with a glug of oil or knob of butter until soft
Add the white wine and cook down until almost dry
Add the rutabaga chunks and cream and simmer until the rutabaga is fall apart tender
Remove from the heat and mash until uniformly chunky
Serve as you would mashed potatoes
