Sweet roasted carrots are paired with a nutty black sesame aioli, a drizzle of hot honey, and crispy fried garlic scapes. Fresh scallions add a bright finish to balance the richness of the dish.
1. Preheat oven to 425 F. Toss carrots with olive oil and generous pinch of salt and spread them onto a sheet pan. Roast until the carrots are tender and browned around the edges.
2. While the carrots are roasting, make the black sesame aioli. Stir together mayonnaise, black sesame seeds, lemon juice and toasted sesame oil. Taste and adjust seasoning with salt if needed.
3. Cut the garlic scapes into roughly 2-inch pieces. Heat the neutral oil in a small skillet over medium-high heat. Add the scapes and cook until bright green and beginning to crisp. Transfer to a paper towel and season with a pinch of salt.
4. To serve, spoon the black sesame aioli onto a platter and spread it into an even layer. Arrange the roasted carrots on top. Drizzle with hot honey and finish with fried garlic scapes and sliced scallions.
Tip: If garlic scapes are no longer in season, thinly slice garlic cloves and gently fry until golden and use in place of the scapes.
