Rhubarb Gin Fizz

Ingredients

8oz poached rhubarb ground cherry syrup
4oz lemon juice
8oz gin
12oz sparkling wine

Method

  1. Combine the poached rhubarb syrup, lemon juice and gin
  2. Pour over ice and stir to chill
  3. Top off with 2oz sparkling wine and serve
