Pickled Green Strawberries

We love the tart, tannic flavor of these little green berries especially in a salad or paired with cheese. 


Ingredients

2 lbs unripe strawberries
1 cup rice wine vinegar
2/3 cup water
1/3 cup sugar
1 tsp salt

Method

  1. Wash the strawberries and place in a heat proof container
  2. Bring the remaining ingredients to a simmer and cook until the sugar is dissolved
  3. Pour the liquid over the strawberries and allow to cool before refrigerating
