Marinated Mushrooms

These marinated mushrooms are a great way to add a bit of acidity to any platter of roasted vegetables or bowl of salad greens. Plus they keep in the fridge for a couple of weeks.


2 tbsp brown sugar
1/4 cup white wine vinegar
1/2 cup olive oil
1 lb mushrooms, any variety, cut or town into large pieces


  1. Dissolve the sugar and vinegar and then add to the olive oil
  2. In a large frying pan heat a big glug of olive oil over medium high heat
  3. Pan fry the mushrooms, seasoning them liberally with salt and black pepper
  4. Continue cooking until the mushrooms are caramelized and cooked through, about 12 minutes
  5. Remove from the heat and pour the vinegar mixture all over and let marinate for 10 minutes before serving or cooling to store
