Kohlrabi Potato Gratin

Kohlrabi adds a lightness to this cool weather casserole. It can also be made a head of time and rewarmed for a future gathering or holiday party.


Ingredients

3 kohlrabi bulbs, either green or purple
2 lbs potatoes, any variety
8 oz cheddar or other hard cheese, grated
1 1/2 cups heavy cream
1 tsp thyme or herbs de provence (optional)

Method

  1. Heat oven to 350F
  2. Peel the kohlrabi and slice into 1/4 " thick rounds
  3. Slice the potatoes into 1/4 " thick rounds
  4. In a 9x9" greased casserole dish shingle one layer of kohlrabi on the bottom and season with salt, pepper, and the herbs if using
  5. Top with a layer of potato and a sprinkle of the grated cheese
  6. Repeat until out of all ingredients finishing with a layer of grated cheese
  7. Gently pour the cream into the side of the casserole dish so as not to disturb the layers
  8. Top with tin foil or a baking lid and bake until tender, about 40 minutes
  9. Remove the tin foil and brown the cheese on top
