Grilled Little Gem Lettuce with Anchovy

This recipe combines sweet, grassy lettuce with the smokey flavor of the grill, the salt of anchovy, the tang of lemon, and the richness of hard-boiled egg.


1 head little gem lettuce (per person)
1 egg, hard-boiled
3 anchovy filet
1 small shallot
1 lemon, zest and juice
1/4 cup olive oil


  1. Cut the head of lettuce in half and wash between the leaves then allow to dry
  2. Grate the hard boiled egg Mince the anchovy and shallot then combine with the lemon zest, juice, and olive oil
  3. Over high heat, grill the lettuce until charred on the outside (about 5 minutes)
  4. Spoon the anchovy dressing over the lettuce
  5. Top with the grated egg and serve
