Grilled Leeks with Cherry Tomatoes and Goat Cheese

Singed leeks paired with tangy tomatoes and creamy goat cheese make a perfect side dish or pair with thick slices of toast and a green salad for a main course.


6 leeks, washed and cut in half lengthwise
2 pints cherry tomatoes
1 lemon, zest and juice
5 sprigs thyme, optional
1/4 cup olive oil
4oz fresh goat cheese


  1. Drizzle the leeks with neutral or olive oil, season with salt and pepper, then grill over medium high heat until tender and slightly charred on the outer leaves
  2. Combine the cherry tomatoes, lemon zest, juice, thyme sprigs, olive oil, and a big pinch of salt and let sit for 10 minutes
  3. Spoon the tomato mixture over the leeks (either warm or room temperature) and then dot the goat cheese all over
