Green Garlic Beans with Lemon & Herbs

Tender beans simmered with green garlic, lemon, and fresh herbs for a simple, comforting spring dish.


Ingredients

2 tbsp olive oil
1 cup green garlic (white and green parts), thinly sliced
3 cups cooked beans of choice (butter beans, cannellini, chickpeas, cranberry beans, etc.)
1/2 cup chicken or vegetable stock
1 tsp lemon zest
1 tbsp lemon juice
2 tbsp parsley, chopped
salt and pepper to taste
optional: grated parmesan or toasted breadcrumbs

Method

1. Heat olive oil in a skillet over medium low heat. Add green garlic with a pinch of salt and cook gently until softened and fragrant.

2. Add cooked beans and stock.  Simmer gently until beans are warmed through.

3.Stir in lemon zest, juice and herbs. Season with salt and pepper to taste.

4.Spoon into a shallow bowl and finish with Parmesan or toasted breadcrumbs if using.
